Snowboy is one of Little Santa's most dear friends. Since they spend so much time together I created a cookie in honor of Snowboy's good natured and fun loving spirit. The Snowball cookie is simple to make and is perfect for any winter festivities.

Ingredients

1 cup butter
1/2 cup confectioners sugar
1/2 tsp. salt
2 tsp. vanilla
2 cup sifted flour
1 cup chopped pecans
Additional confectioners sugar (for rolling)

Preheat oven to 375 degrees F. Beat butter and sugar until creamy. Add remaining ingredients and stir together. Use a teaspoonful of dough and roll into small ball. Bake for 12 to 15 minutes. Cool slightly and roll in confectioners' sugar.

Pair these cookies with a cup of hot cocoa and you have a delicious afternoon treat!
